Banana Nut Bread

Ingredients for one loaf:
1 cup sugar
1/2 cup shortening
2 eggs
2 cups flour
1/2 cup chopped walnuts
1 teaspoon baking soda
3 soft, ripe bananas, mashed

Directions:
Cream sugar and shortening. Add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter into 1 greased and floured loaf pan, Bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean.

Chocolate Chip Banana Bread

Ingredients for two loaves:
1/2 c. butter
1 c. sugar
2 eggs
3 bananas
1/4 c. nuts
1/4 c. chocolate chips
1/4 c. maraschino cherries
2 c. flour
1 tsp. soda
1/2 tsp. salt

Directions:
Mix ingredients together and pour into greased bread tins. Bake at 350° for approximately one hour or until toothpick inserted comes out clean.

Easy Banana Bread

Ingredients for 1 loaf:
1/4 c. butter or shortening
1/2 c. sugar
1 egg
2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
3 tbsp. yogurt or buttermilk
3 ripe bananas, mashed

Directions:
Mix shortening or butter with the sugar and egg. Mix dry ingredients together. Mix yogurt and bananas. Add dry mixture and banana mixture to the shortening mixture. Pour into greased 9″ x 5″ pan. Bake at 350° for 1 hour.

Low-Fat Banana Bread

Ingredients for one 9″ x 5″ bread loaf pan:
2 eggs
2/3 cups white sugar
2 very ripe bananas, mashed
¼ cup applesauce
1/3 cup nonfat milk
1 Tbsp. vegetable oil
¾ Tbsp. vanilla extract
1¾ cups all-purpose flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1/3 cup chopped walnuts

Directions:
Preheat oven to 325°F (165°C). Spray a full size bread pan with non-stick cooking spray, and lightly dust with flour.

In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes. Then beat in bananas, applesauce, milk, oil and vanilla.

In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir the flour mixture into banana mixture, mixing just until blended. Fold in walnuts.

Pour batter into prepared pan, not filling more than 1/2 full or they will overflow while baking.

Bake in preheated pan until golden and a toothpick inserted into center of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

Moist Banana Bread

Ingredients for one loaf:
3 or 4 ripe bananas
1 egg
1 cup sugar
1 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 cup melted butter or margarine
1/2 cup walnuts (optional)
1/2 cup chocolate chips (optional)

Directions:
Mash bananas by hand or with a mixer until fairly smooth (the batter may still appear slightly lumpy). Add all other ingredients in order (skipping) the butter, mixing as you go. Add the melted butter last. Pour into 1 greased and floured loaf pan or 2 small loaf pans and bake at 325 degrees for 50 to 60 minutes.

Note: If possible, grease pan with butter flavored crisco or use butter.

Sour Cream Banana Bread

Ingredients for one loaf:
1 cup sugar
1/2 cup oil
2 eggs
1 cup mashed bananas (2 medium)
1/2 cup sour cream
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350°F. Grease and flour the bottom only of a 9′” x 5″ loaf pan. In large bowl, beat together the sugar and oil. Add eggs, bananas, sour cream and vanilla, blend well. Lightly spoon flour into measuring cup and level off. Add flour, baking soda and salt and stir just until dry ingredients are moistened. Pour into prepared pan.

Bake at 350°F for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator.

Whole Wheat Banana Bread

Ingredients for one loaf:
2 bananas, slightly over ripe
2 eggs large
1 ½ cups whole wheat flour
1 cup sugar
½ cup flour
½ cup butter
½ cup walnuts
¼ cup hot water
1 tsp baking soda

Directions:
Preheat oven to 325°F (160°C).

Peel and mash the bananas. You should end up with 1 cup when mashed.

Break the eggs into a bowl and beat slightly. Soften the butter and chop the nuts.

In a mixing bowl, cream together the butter and sugar. Fold in the eggs and mashed bananas, blending until smooth.

Sift the flour, salt and soda into a bowl and mix in the whole wheat flour.

Fold the dry ingredients into the banana mixture adding the water as the mixture becomes dry.

Fold in the nuts, ensuring that they are evenly spread throughout the banana bread mixture.

Lightly grease a 9″ x5″ loaf pan and spoon in the banana bread mixture. Bake in the center of the oven for approximately 70 minutes until done.

Allow the banana bread to cool slightly before removing from the loaf tin to complete cooling. Serve this whole wheat banana bread sliced with butter (adding honey or syrup if wanted).
