Cornmeal Bread
Ingredients for a 1 pound loaf:
1 1/2 cups bread flour
1/2 cup yellow cornmeal
1 tbsp dry milk
1 tsp sea salt
1/2 tsp cayanne pepper
2/3 cup water
1/3 cup plain nonfat yogurt
1 tbsp canola, safflower or sunflower oil
1 tbsp honey
2 tsp active dry yeast
Directions:
Fit the kneading blade firmly on the shaft. Add the ingredients according to the manufacturer’s instructions. Set your machine for Whole Wheat and start. After your bread is finished allow it to cool fully on a wire rack before slicing, eating or storing.
Chunky Chili Cornbread
Ingredients for a 1.5 pound loaf:
1 1/4 cups water
1 egg
1/4 cup skim milk powder
1 tsp salt
2 tbsp granulated sugar
2 tbsp shortening
3 1/3 cups bread flour
1/3 cup cornmeal
2/3 cup thawed frozen corn kernals, well drained
1 1/2 tsp crushed red chili peppers
1 tsp bread machine yeast
Directions:
Add ingredients into the baking pan according to the manufacturer’s instructions, select the Basic cycle and start.
