you may need to roll it out thinner or let is rise a pit more. you can also turn down the heat a bit so that the inside can cook as well.

Great to see the different stages. You didn’t say how long to let it rise. Usually an amount of time is stated or “until doubled” is stated. I’ll assume it doubles.

Hi dede, thanks for the recipe. my pita bread was really really chewy from out of the oven, and when cooled and placed in plastic bag; it actually was hard to finish 1 whole piece because it was so chewy). any idea why? i barely kneeded the dough (less than 5 minutes) could it have been the baking temp? (500 on baking stone)? help!!

yes, you may need to adjust the temperature, it may have gotten to hot
Each oven is different so you will need to adjust the cook time

Aloha from Hawaii! I noticed the first few of my pitas came out okay, but the rest were all crispy and hard if i left it in for the requisite amount of time. We have a gas stove, could that be why?

that was amazing!
makes me really miss lebanon, especially those cooler summer nights when my grandmother and the other women in our town would stay up and make the weeks worth of pita bread.
the wonderful smells, the unity of everyone working together, and the hard work that results in beautiful bread made with a recipe passed down from generation to generation, but always handled with the same love and appreciation, really hits home.

well to be honest with you I’ve never tried it with splenda. But it is such a small amount of sugar that it should not harm you if you are trying to avoid calories. Give it a try
