In this video, Betty demonstrates how to make scrumptious Keeneland Chicken Salad in a Bread Bowl, using the recipe of Chef Ed, from Turf Catering of Lexington, Kentucky. This is a different style of chicken salad from Bettys Elegant Restaurant Chicken Salad Sandwich and also from Bettys Hot Chicken Salad Tarts (both in bettyskitchen). This is the same chicken salad that I showed on our trip to the Keeneland Horse Race track, made from Chef Eds recipe. In the Equestrian room, the chicken salad was served surrounded by fresh fruit, but this time I followed another suggestion from Chef Ed, and served it in a bread bowl. It is terrific! Ingredients: 6 six-ounce boneless, skinless chicken breasts ½ cup diced celery ¼ cup diced onion 1 cup mayonnaise 1 teaspoon white pepper (If you dont have white pepper, I suggest using regular black pepper.—Betty) 1 teaspoon lemon juice 1 teaspoon Worcestershire sauce small amount of chopped tarragon, if desired •Cook chicken breasts and refrigerate. •Dice chicken into 1-inch cubes and put in bowl. (Note: This is wonderful for chicken salad served on a plate, but if you plan to make chicken salad sandwiches, the cubes will be too big, so just dice them into a small size [about 3/8-inch to ½-inch].—Betty) •Add all other ingredients and mix thoroughly. Made this tonight - I added tomatoes because I had run out of onions but still wanted a bit of bulk… and a touch of vinegar (only a few drops), ’cause I love my salads with that tiny twang that vinegar gives. It was YUMMY!!!! Thanks for the recipe.

I’m glad you like the chicken salad. The way we actually ate it was for me to put the cap back on the bowl and cut out wedges, and it was yummy with the bread! I am thinking about printing all of my recipes and indexing them, which could possibly lead to a cookbook…
Estragon…what an interesting word for tarragon! I bet you soak up a lot of the German culture. That must be a great experience, but I guess you think of home a lot, too!

Hi,
chicken salad is one of my favorite ‘hearty’ salads, you can have it on a sandwich too!
The germans make it similar but add some (seedless) grapes cut in half…
The bread bowl makes it real fancy and i bet the guys munch some of the bread bowl
when the salad is all gone…. at least i would
you should make a DVD or a Recipe Book or something!

I am using YouTube to organize my recipes! Some of my recipes have never been written down before, and this forces me to do it. Also, I am saving each recipe writeup in a Word document, and I hope to eventually get a cookbook printed, so that I can pass my 50 years’ worth of recipe creating and collecting down to my daughter!
