This is a simple recipe for Focaccia Bread ~ Italian Flat Bread. It goes great with Stews, Soups and Spaghetti Sauce. I do use a Kitchen Aid Mixer but it can be made by hand,, but will take longer. Focaccia Bread Dough ~ Makes 2 2 c. water Splash of Olive Oil Heat to 120* In Kitchen Aid mixer bowl put ( Use dough hook): (I first mix with a spatula) 2 C. Flour 1/4C. Sugar 1 tsp. Salt 2 ½ tsp Yeast Add the water/Olive Oil, turn mixer on low: mix well,, scrapping bowl a few times. Slowly add more flour to make a ball that forms around the dough hook. Use just enough flour to make a dough that is not to sticky.. I don’t measure the flour because depending on the weather =some days you will use more and other days less. Using 4-1/2-5-1/2 cups of flour total. Knead the dough in the mixer for 5 minutes. Place in a greased bowl.. Turn the dough to grease all sides. Cover, and rise in a warm place until doubled. About 1 ½ hours. Punch down.. Place on a floured cloth, knead a few minutes. Cut dough in half. Cover and rest 20 minutes. Either roll the dough with a rolling pin or use your hands to stretch the dough out onto 2 greased pizza pans. Let the dough rest for 10- 15 minutes. Take your fingers and poke into the dough to make indentations. Brush lightly with Olive Oil. I use different spices depending on what meal I am making: For my soup;; I sprinkled: Italian seasoning garlic powder onion power parsley Parmesan cheese Basically use any spice to go with your meal. This is a very simple recipe for bread. I learned this recipe about a year ago, and I completely stopped buying bread since then. It’s ridiculously easy to make, and the texture, taste, and smell is amazing. BREAD 3 cups flour 1 tsp salt 3/4 tsp yeast* 1 1/2 cups water ——————— *yeast: I used bread machine yeast in this video. If you use fresh yeast, use 7 grams, or about a teaspoon, and dissolve it in the water before you add the water to the flour. If you use regular yeast, dissolve it first, too. It helps if the water is lukewarm. ——————- Mix together the dry ingredients. Add water, slosh around. Mix into a fairly uniform ball. Cover and let rise for 3-5 hours. (if you want, you can put it in a WARMED oven - BUT TURN THE OVEN OFF - with pots of boiling water in the oven. This way, the yeast has the perfect environment to grow.) Once risen, turn out on to a floured surface. Roll into ball shape. Preheat a heat resistant pot with a cover at 450. Put the bread dough in the hot pot. Put it in the oven at 450 for 30 mins, then remove the cover. Finally, bake for 20 more minutes in the 450 oven. Cool on cooling rack. Enjoy hot with butter and jam. Variations: roll in cracked wheat, flax seeds, poppy, sesame seeds. Add in with the dry ingredients: herbs, olives, nuts, raisins, dried tomatoes, cheese. Substitute 1/4 cup of water with molasses. Double the recipe, half the recipe. Listen to Rush instead of King Crimson while making the bread.
